🧺 Ingredients (makes 6–8 waffles)
- 2 cups fresh Wild Flight Farm spinach
- 1 cup milk
- 2 eggs
- 1½ cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 2 tablespoons olive oil or melted butter
- ½ cup grated cheese (cheddar, mozzarella, or feta)
Optional: pinch of garlic powder or dried herbs (dill, oregano)
🔥 Instructions
1. Blend the greens:
In a blender, combine spinach and milk. Blend until smooth and bright green.
2. Make the batter:
Add eggs, flour, baking powder, salt, and oil. Blend or whisk until smooth. Stir in grated cheese and optional seasonings.
3. Preheat waffle iron:
Heat your waffle maker and lightly grease if needed.
4. Cook the waffles:
Pour batter into the waffle iron and cook according to your machine (about 3–5 minutes), until golden and slightly crisp.
5. Serve warm:
Remove and serve immediately or keep warm in a low oven.
🌾 Farmer’s Tip:
For extra crispiness, let the waffles cook a little longer and place them on a rack instead of stacking — this keeps them from getting soft.
🍽️ Serving Ideas:
- Top with a fried or poached egg
- Serve with sour cream or yogurt and fresh herbs
