Cabbage & Cucumber Salad with Creamy Avocado-Cilantro Dressing

Our cabbage is crisp and slightly sweet, while fresh cucumbers bring a refreshing crunch. Paired with creamy avocado and fragrant cilantro, this salad is a perfect balance of texture and flavor — light, nourishing, and full of life.
🧺 Ingredients (serves 4)
For the salad:
- 4 cups finely shredded Wild Flight Farm cabbage
- 1 long English cucumber, thinly sliced or julienned
- 2 tablespoons fresh lemon juice
- Pinch of salt
For the creamy dressing:
- 1 ripe avocado
- ¼ cup fresh cilantro
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 small clove garlic
- 2–3 tablespoons water (to thin)
- Salt and pepper to taste
🔥 Instructions
1. Prep the cabbage:
Place shredded cabbage in a large bowl. Add lemon juice and a pinch of salt, then gently massage for 1–2 minutes to soften slightly.
2. Add cucumbers:
Stir in sliced cucumber and set aside.
3. Make the dressing:
In a blender or food processor, combine avocado, cilantro, lemon juice, olive oil, garlic, salt, and pepper. Blend until smooth, adding water gradually until creamy and pourable.
4. Toss & serve:
Pour dressing over the salad and toss until evenly coated. Serve immediately or chill for 10–15 minutes before serving.
🌾 Farmer’s Tip:
For extra crunch, add thinly sliced carrots or sunflower seeds. This salad is best enjoyed fresh, but can be stored (undressed) for up to 2 days.
