Roasted Cherry Tomatoes with Herbs & Garlic

Sweet, juicy cherry tomatoes roasted until they caramelize and concentrate their flavor — perfect as a side, pasta topper, or bruschetta spread.

🌱 From the Field

Our cherry tomatoes are picked at peak ripeness, sun-warmed and bursting with natural sweetness. Roasting them intensifies their flavor, turning them into a versatile dish you’ll want to keep on hand all week.

🧺 Ingredients (serves 4 as a side)

🔥 Instructions

  1. Preheat oven to 400°F (200°C).

  2. Prepare the tomatoes: Rinse and pat dry. If large, cut in half; if small, leave whole.

  3. Toss to coat: On a baking sheet, toss tomatoes with olive oil, garlic, herbs, salt, and pepper.

  4. Roast for 20–25 minutes, until tomatoes soften, skins blister, and juices start to caramelize.

  5. Serve immediately or let cool and store in the fridge for up to 5 days.

🌾 Farmer’s Tip:

Roasted cherry tomatoes freeze beautifully — spread them on a tray, freeze, then store in a container. Add them to soups, sauces, or grain bowls all winter.

🍽️ Serving Ideas:

  • Toss with pasta and fresh basil

  • Spoon over toasted sourdough with ricotta or feta

  • Serve alongside grilled fish or chicken

  • Stir into cooked quinoa or farro for a quick grain salad
