Roasted Cherry Tomatoes with Herbs & Garlic
Sweet, juicy cherry tomatoes roasted until they caramelize and concentrate their flavor — perfect as a side, pasta topper, or bruschetta spread.
🌱 From the Field
Our cherry tomatoes are picked at peak ripeness, sun-warmed and bursting with natural sweetness. Roasting them intensifies their flavor, turning them into a versatile dish you’ll want to keep on hand all week.
🧺 Ingredients (serves 4 as a side)
-
2 tablespoons olive oil
-
2–3 cloves Wild Flight Farm garlic, sliced
-
1 teaspoon fresh Wild Flight Farm herbs (thyme, basil, oregano, or a mix)
-
Salt and black pepper to taste
-
Optional: a pinch of chili flakes, balsamic drizzle for serving
🔥 Instructions
-
Preheat oven to 400°F (200°C).
-
Prepare the tomatoes: Rinse and pat dry. If large, cut in half; if small, leave whole.
-
Toss to coat: On a baking sheet, toss tomatoes with olive oil, garlic, herbs, salt, and pepper.
-
Roast for 20–25 minutes, until tomatoes soften, skins blister, and juices start to caramelize.
-
Serve immediately or let cool and store in the fridge for up to 5 days.
🌾 Farmer’s Tip:
Roasted cherry tomatoes freeze beautifully — spread them on a tray, freeze, then store in a container. Add them to soups, sauces, or grain bowls all winter.
