Hearty Green Lentil Salad with Herbs & Lemon

Wholesome, filling, and bursting with bright flavors — this lentil salad makes the most of our organic green lentils. Perfect as a side dish, a light lunch, or a base for roasted veggies and proteins.

Our organic green lentils are rich in protein, fiber, and iron. Unlike red lentils, they hold their shape when cooked, making them perfect for hearty dishes that don’t turn mushy.

🧺 Ingredients (serves 4–6)

For the Dressing

  • 3 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey or maple syrup

  • Salt & pepper to taste

🔥 Instructions

  1. Rinse the lentils under cold water. Place in a pot with water or broth and bring to a boil. Reduce heat and simmer for 20–25 minutes, until tender but still holding their shape. Drain and cool slightly.

  2. In a large bowl, combine cooked lentils, onion, cucumber, bell pepper, tomatoes, and fresh herbs.

  3. In a small jar or bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.

  4. Pour the dressing over the salad and toss gently to coat.

  5. Let sit for 10–15 minutes before serving to allow flavors to blend.

This salad tastes even better the next day! Make a batch ahead of time for easy lunches or quick sides.
