Garlic Green & Yellow Bean Sauté

A quick, colorful skillet recipe that brings out the natural sweetness and snap of freshly picked beans — finished with a touch of garlic and lemon for extra brightness.

🌱 From the Field

Our green and yellow beans are harvested at their peak — crisp, sweet, and vibrant. Whether served hot or chilled, this dish is a great way to highlight their natural flavor with just a few simple ingredients.

🧺 Ingredients (serves 4 as a side)

🔥 Instructions

  1. Trim the ends of the beans. Rinse and pat dry.

  2. Blanch (optional): For extra tenderness and color, boil beans in salted water for 2–3 minutes, then plunge into ice water. Drain well. (Or skip this step for a firmer bite.)

  3. Sauté: Heat oil or butter in a skillet over medium heat. Add garlic and cook gently for 30 seconds until fragrant.

  4. Add beans: Toss beans into the skillet and cook for 4–5 minutes, stirring occasionally, until just tender but still crisp.

  5. Season with salt, pepper, and lemon juice. Garnish with seeds or herbs if using.

  6. Serve warm or at room temperature.

🌾 Farmer’s Tip:

This dish stores well in the fridge and makes a great base for grain bowls, pasta salads, or as a cold bean salad with feta or olives added in.

🍽️ Serving Ideas:

  • With roasted potatoes and grilled meat

  • Tossed into a cold quinoa or rice salad

  • Served over toast with a soft egg on top

  • Chilled and mixed with a tangy vinaigrette for a picnic
